Celebrity Chef, Clarissa Dickson Wright, comes on board with The British Lops

We are incredibly pleased to anounce that Clarissa Dickson Wright has agreed to stand as our Society Patron.
A long standing supporter of The British Lop Clarissa has the following to say....
“The British Lop is the perfect eating pig. It has the right conformity of carcass and the right balance of fat to meat, and consequently produces brilliant crackling. It owes its continued existence to the stubborn bloody-mindedness of the British farmer in the face of mindless bureaucracy. When MAFF tried to standardise all pig breeds to the numbered Scandinavian bacon varieties, three Cornish farmers all refused to dispose of their British Lops and so the gene pool, though small, continued. The British Lop’s huge ears, when put into brine, are a delight to any cook and the bacon it produces has an exquisite flavour and, again, the perfect balance. The best way to save a rare breed, especially one as commericially viable as this, is to eat it, so I urge you to do so.”
